What is Barbecue (BBQ) to you?

I've been to places that specialize in BBQ where they smoke their meats over a slow wood fire, usually mesquite, and then have BBQ sauce on the side for those who want to add it. Because of the prevalence of the sauce on many menus, a lot of people think that BBQ means "covered in sauce".

Now, I'm not from the south, so I did grow up with that assumption for the most part - that it's the sauce that makes something BBQ. Then I attended my first chicken BBQ fundraiser dinner (popular around here) and there was no sauce to be found anywhere. That's when I learned that true BBQ was the cooking, not the sauce. The sauce was the accompaniment. And the chicken was delicious! 

I went out to dinner another time with a friend and had BBQ chicken and ribs. My dinner companion had asked if the ribs were cooked in the oven or on the grill. He was told by the owner that they were grilled. They weren't. Not only were they not grilled, they and the chicken were drenched in sauce. Apparently, that was this cook's idea of what BBQ is. It's not that it didn't taste good. The chicken was apparently cooked on the flat top and had some browning to it and the sauce was good, not too strong, sweet or spicy hot; but over all, this was NOT BBQ ribs - it was just ribs with BBQ sauce on them. I ended up taking those home to my friend Tom. I ate the chicken as well as the broccoli (cooked exactly as I like it) and the applesauce. I had plenty to eat without the ribs.  

So, as I asked up front, what do YOU consider BBQ? Is it meat cooked over an open flame or on a grill? Or is it just meat with BBQ sauce? Or is it some combination of the two? And, what is your favorite kind of BBQ? Whether that is meat or cooking style, I don't care. I'm just curious.

Absence Makes the Writing Harder

I have to say, it's been hard keeping up with my food blog this summer since I haven't been cooking as much or doing any blogging challenges related to this blog. But, I'm going to try to do better.


I have mentioned in the past that I am diabetic. I haven't been as diligent as I should be with maintaining a good diet, but I know I have improved compared to my old eating habits. I try to stay away from heavily sugar-laden foods and to eat more whole grain foods when they are available. I still eat the occasional sweet treat, but maybe only once a month. I've even taken to asking for sugar-free syrups in drinks when I want a flavored coffee or soda. I'm far from perfect, but I felt that I was treating my body much better than I used to.


Well, apparently I was right. I finally got back to see my doctor who scheduled long overdue blood work for me. When she got the results, she was happy to see that three years of no appointments hadn't thrown my numbers off the charts. My triglycerides were still high, but my LDL and HDL numbers were actually acceptable. My blood pressure was well within normal range and my A1C was 6.9, which is within therapeutic range for diabetics (maybe at the top, but I haven't been to the doctor for years!) 


The other thing was that I hadn't monitored my blood sugar for almost as long as I'd seen the doctor, mainly because I didn't have a clue where my monitor was after moving twice in a year and a half. So, a couple weeks ago, I went online looking to see where I could get another glucose monitor and found Abbott Labs were offering a free monitor if I registered for their MyFreeStyle Promise Program. It provides copay discounts for those with insurance so that they don't have to pay more than $15 for their test strips. I still have to call them to find out if they have any discount for those of us without insurance, but considering they will replace the monitor every three years for free as long as I am in the program, I think I can find a way to get the test strips along the way without complaining too much. 


When I tested my sugar, I was pleasantly surprised that my pre-prandial (before eating) readings were all under 110, which has never happened since I began testing my blood. I was shocked! I'm hoping it's because I'm doing something right and not because the meter is poorly calibrated. Now I need to get more strips so I can proudly show my doctor next month how well I'm doing!

To change the subject, do you like to grill? If so, which do you prefer? Charcoal or propane? It's funny how popular grilling has become. There's nothing quite as good as a steak or a burger cooked over an open flame! Yet, I don't particularly like to do it. When it's hot in the summer, I don't even like to cook INSIDE, let alone cook outside in the heat. I have done it, though, and can enjoy it when temperatures are right. I would take my kids and my mother-in-law to one of the city parks where grills were provided and we'd cook hamburgers and hot dogs with the charcoal we brought while the kids ran around the park playing. We always had a good time, but also plenty of shade trees and a nice breeze to go with it.


But, I've noticed just how elaborate home grills have become. There are so many different kinds these days, some even with separate burners for sauce pans. Sometimes I will go online and look at all sorts of different items just because I get curious. Well, curiosity hit me again and I decided to see what was up with the different kinds of gas grills that were around. I came upon a marketing site that showed both charcoal and propane bbqs. Wow! I thought the gas grill my parents had was pretty upscale since it also had a rotisserie (that they never used once), but some of these are big enough that they'd work in your kitchen (if you had proper ventilation, obviously). Others are more like the smaller versions I've used in the past, both table top and free standing. Some remind me of the old Coleman stoves, but on steroids. There really are so many choices out there these days. If you love to grill, I can't imagine not being able to find something to suit your personality.

Lack of Motivation Keeps Me Wordless

Wow. I didn't realize how long it had been since I posted here. I haven't wanted to cook and because of that I haven't written anything. This lack of motivation hasn't really let up. I'm sure part of it is because I hate cooking for just me. My daughter rarely eats what I make or doesn't come home in time for dinner. I don't like putting out the effort to make something no one will eat, or not eat much of.


But, I have eaten. And, I've enjoyed what I ate.


We wanted to go to Red Lobster for their $15 four-course special, but there were so many people there that they were standing outside waiting for their numbers to be called. That's not for me. So, we went to Don Pablo's Tex-Mex instead. I usually have something traditionally Mexican, but this time I went for one of their Texas barbecue choices. I got their half-slab of ribs and the grilled chicken breast. They were delicious!! Lots of meat on the rib bones and juicy and tender boneless chicken. I might opt out of the BBQ beans next time because they were not quite what I expected, but everything else was great.


Then I had the opportunity to go to Texas Roadhouse. I swear, I died and went to heaven that night!! I had the pulled pork and grilled chicken combo. The chicken breast was butterflied (about twice the size of what I'd had at Don Pablo's) and slathered in a rich, spicy BBQ sauce. The pulled pork was tender, smoky and saturated in the same sauce. I had the option of two sides, so I chose salad and a baked sweet potato. All this for the same price Don Pablo's charged me for the meal I had there. The salad was crisp and fresh, but I was disappointed with the ranch dressing. It was very sour-creamy, as though it had been thinned too much with buttermilk. Otherwise, it was a very nice salad with shredded cheese, chopped hard boiled egg and croutons. The baked potato came with cinnamon butter and brown sugar, but I only used the cinnamon butter. The potato was so perfectly cooked there was nothing left but the skin when I was done. 


We also had their Cactus Blossum (their version of a Bloomin' Onion) and it was delicious! I had plenty of leftovers to bring home. I only ate half of the chicken, half of the ribs and a small portion of the onion to bring with me. Their rolls are also delicious, too, and come out fresh every 15 minutes. So soft with honey butter to put on them, they're wonderful!!


A couple days ago, we went to Bassett's Memphis BBQ that just opened near us. I had pulled brisket and pulled pork with macaroni and cheese and collard greens. The macaroni and cheese and the collard greens were outstanding! I love collards cooked like they cook them. I'll take them any day over spinach. The meats were smoky and tender with loads of spicy BBQ sauce and more on the table if we wanted it. The meal was just about as heavenly as the one I'd had at Texas Roadhouse.


Then there's tonight. Again, I wasn't in the mood to cook. But, this time, my guy friend cooked for me. He'd been wanting to make Kedgeree for a while now. It didn't sound too appealing to me, but I reserved judgment until tasting it since it contained Basmati rice (I love it), garam masala (I love it, too), smoked fish (never had it - couldn't pass judgment) and hard boiled eggs (I don't love them at all). It actually wasn't half bad. Even with the eggs in it - the flavor of the eggs wasn't noticeable and the fish having been smoked didn't taste fishy. But, there were bones and that really detracted from the pleasures of eating it for me. I had to be on constant alert to make sure I didn't swallow any fish bones. If there was a way to make it with boneless smoked fish, I'm sure I'd enjoy it a whole lot more.
