Pasta Sauce in the Slow Cooker

I'm headed to bed with a pot of pasta sauce slowly cooking in the kitchen. I had bought some "loose" sausage at the store the other day hoping I could use it for breakfast and maybe some sausage gravy. Unfortunately, the seasoning turned out to be for Italian recipes (they never list the actual spices - why is that?), so I browned in my slow cooker pan and added a can of peeled plum tomatos, a can of crushed tomatoes and a can of "Progresso Recipe Starter" Oven Roasted Tomato Sauce plus some Italian spice blend and some Adobo seasoning (basically, garlic powder).

Tomorrow I'll decide whether or not I want to make a baked pasta dish with ricotta and mozzarella cheeses or cook the pasta separately with the sauce for topping. In the meantime, the flavors will blend perfectly during the night.

Again, I don't have a photo of what I'm making because I didn't think of it while I was downstairs, but the one I chose is a close resemblence.

Dinner at home! It had been so long!

My daughter cooked dinner recently and planned to again the next night. I have to admit, I love when someone else does the cooking! The first night she made breaded steak with broccoli and a cheese and broccoli pasta side. I so enjoyed that meal!! The next night we had pork chops with mashed cauliflower and broccoli with cheese. It turned out to be really good! She had a doctor's appointment that morning and that afternoon we went together to reschedule another appointment and pick up a few more things from the store. She also wanted me to invite my guy friend, so I sent him a message to let him know. Unfortunately, he decided not to join us.

If anyone wants to respond, I'd like to ask you if you always have dinner at home or if it's only once in a while? What kinds of dinners do you enjoy most?

Pasta Stuffed Peppers!

OK, here I am again, not all that long after my last post. Can you believe it? Well, I actually did something worthy of posting right away and I'm here to tell about it.

I had made the macaroni with the pasta sauce that I used the roasted tomatoes for. There was quite a bit of it and Deb wouldn't eat any of it. I didn't want to eat it all myself, so I thought maybe I could use it for stuffing the peppers she'd brought home that needed to be used. I went online and found that plenty of other people had used pasta to stuff peppers, so I found one that used elbow macaroni like I did in order to know what temperature to set the oven and how long to bake them.

Not my peppers. These are from  Tummy Temptations.
Before I stuffed the peppers, though, I diced up a couple snack sized summer sausages to add meaty flavor to the mix and opened a can of corn, drained it and added that as well. I cut the tops off of five peppers and removed the seeds and veins, got out my square baking dish and placed the peppers in it. Then I stuffed them with the macaroni mixture (that now had diced summer sausage and corn). We had a small block of cheese that I grated a portion of and topped each pepper with a blend of ketchup, dried mustard and chili powder followed by some grated Cheddar Jack cheese. I followed the baking instructions for the one recipe I'd found and in an hour, I had five lovely stuffed peppers waiting to be eaten.

My friend Tom really liked them - he had two. My daughter had one, which surprised me since she had just eaten a hoagie. I haven't had one yet because she had brought me some broccoli soup when she came home, so I was no longer hungry. But, there are still two peppers left and they're now in the freezer waiting to be reheated and eaten. I'm very happy with the results, although next time I'll plan ahead and put pasta sauce around all the peppers so they are more "saucy". I like peppers that way.

Although I'm not providing any specific instructions for this meal, it wouldn't be hard for you to do. Just make up your pasta and then prepare your peppers, stuff them and bake for 30 minutes covered with foil and 25-30 more minutes without foil, all at 350 degrees. I did put a little water in the dish around the peppers to keep them from drying out, but I'd like to put pasta sauce in the next time. If your family doesn't care much for rice like my daughter doesn't, this might just be the recipe for you.

I had one pepper I wasn't able to use for stuffing, so I cut it up along with the "lids" from the five I did use and froze it for future use. This seems to be a good way to use up leftover pasta if you also happen to have peppers.

Late Nite Dinner and Other Food News

Happy November!! It's my birthday month and I've been promised a trip to Vermont as my present. We shall see. Money is tight for both of us, but other than gas, I think we can budget it fairly well. Maybe this time I'll get to see the Grandma Moses exhibit in Bennington that I was promised the last time we were there.

Apparently, I had an older version because ours had egg noodles.
Anyway, I am in the process of making Hamburger Helper Beef and Noodles, but I added a can of green beans to it as well as another cup of gravy so it will go farther. It always seems the gravy isn't nearly enough when you make these, but that won't be a problem this time. I'm also using soy milk instead of regular milk because my daughter has an unusual intolerance to milk. Most of us who have reactions have digestive issues. My daughter breaks out all over with acne. It's a shame because she just loves milk and dairy products, but as often as possible, we try to make them so she won't react. It's funny, too, because she can drink LactAid without a reaction, so it is apparently the Lactose that's the issue, but she doesn't have the most common reaction.

Anyway, I decided that, while the food is simmering the required 10 minutes, I would come in and post a long-overdue blog entry in my food blog.

I had the feeling when I wrote my last food blog entry that I was forgetting one of the places I had gone to eat. I just realized I'd forgotten TWO! LOL

Example of an Indian buffet
I went to another Indian buffet in Pennsauken called Palace of Asia. There have been others I liked more, but there have also been others I liked far less. The food was fresh and varied, something for everyone. I loved the fruit custard they had available for dessert. I'd love to know how to make the "custard" they put the fruit in. It wasn't vanilla or chocolate - it was fruit flavored, yet thick and creamy. Delicious!

Lobster Bisque
We also went to Cap'n Cats Crab Bar in Voorhees last week. It was my turn to treat and I had bought a certificate worth $30 for $15. So, that and an additional $6.21 at the end fed the two of us some delicious seafood. We both started off with Lobster Bisque, which was excellent. I had Coconut Fried Shrimp with onion rings and he had grilled Mahi Mahi, also with onion rings. He was a bit disappointed with the quantity of fish he got for the price, but otherwise it was all excellent. My shrimp came with a Pina Colada dip, but I opted for the cocktail sauce instead. And, we had a bottle of French cabernet; not one of my favorites, but I had a glass while he finished the bottle himself. Good thing I was doing the driving!

Jersey Girl's Italian Pork Gravy - A Great and Easy Recipe

I tried a new recipe today. I can't remember what I was doing when I found it, but I know that the blog's title drew me in. A Jersey Girl Cooks. That got my attention because, you see, I'm a Jersey Girl, too. I have fine-tuned it a bit geographically. My other blog is called A South Jersey Girl Writes. That's where I post my writing efforts that aren't food related. So, I just had to take a look at what she had to offer. That's when I found Mama's Sunday Pork Gravy.

It looked fantastic and oh so easy (something very important to me, of course, being the lazy cook that I am). I have never been able to make a decent pasta sauce from scratch. I could "doctor" the jarred stuff, but without it, my efforts were lacking significantly. Initially, I thought I'd use a couple of my chicken leg quarters, but then I remembered some pork chops I had in the freezer. I thawed them and this afternoon, I began to make this recipe. I'm so glad I did.

Lisa's end result
The recipe calls for one can of crushed tomatoes and one can of tomato puree. I didn't have it, but I did have two cans of crushed tomatoes, so I used both of them. Instead of six cloves of garlic, I used three teaspoons of garlic juice. I didn't have onion powder, so I used dried minced onions instead. So, I was as true to the recipe as I could be and it turned out really well.

My end result, not as dark and rich
The pork chops provided additional flavor and depth to the sauce (or gravy, as Lisa calls it in her blog. I like her explanation - gravy contains meat or is meat based while sauces do not). I may have used a bit too much red wine in de-glazing the pan, but the sauce (er, gravy) still turned out wonderful. The meat was tender and fell off the bone. The cats, of course, were thrilled to have the bone when I was done. I can definitely say that this is a recipe I will be using again!
