Breakfast is Better When Someone Else Makes It!

Scrapple with Eggs and Toast
TG asked me this morning what it is about breakfast that makes me enjoy it so much to want to go out to eat it. Frankly, I enjoy eating breakfast any time of the day, but when I'm in the mood for a full breakfast in the morning and I'm out, I would much rather stop to eat than make it at home. I'm just not ready to be standing at the stove cooking first thing in the morning. Even when I was growing up, when we had a full breakfast, it was later in the morning that we had it. Early morning was more toast and coffee. When I made big breakfasts for my kids when they were little, it was on weekends when I could make more at a later time. During school days, they had cereal and juice or grilled cheese or PBJ sandwiches before heading off to school. So, when I took TG to the airport this morning, I was looking forward to stopping and getting something to eat.

I've eaten breakfast at the Metro Diner two days in a row now. Yesterday, TG and I stopped for breakfast before doing some errands for him before he left today for Arizona to see a friend. I had scrambled eggs with scrapple and wheat toast and a side of grits

instead of potatoes. TG had Eggs Benedict with a side of scrapple. We shared a side of bacon.

Today, after dropping TG off at the airport, I stopped again at the Metro mainly because I wasn't able to find my glasses and thought I'd left them there yesterday morning. I didn't, but I still stayed for breakfast. Today I had a bowl of dried beef gravy with grits instead of potatoes and wheat toast. Of course, coffee is a given on both

days. I had originally planned to stop at Wawa and get a bowl of eggs or a sausage egg and cheese croissant with coffee.

I'll eat the gravy over toast, but I prefer it over potatoes. But, in recent years, potatoes haven't been kind to me, so I've been avoiding them when the option is available. So, when I have the option of grits instead, I take it. I eat grits like I eat other hot cereals. I put butter on it and I add a little sugar. Not a huge amount since I'm diabetic, but enough to keep the grits from being too bland. I've tried it with artificial sweetener, but it's not the same.

What's your favorite breakfast? Do you like any of these things?

I love being waited on!!

I stopped by my landlord's house  one day when I got done taking my daughter to work and running to my doctor to pick up a letter excusing me from jury duty. They're not home, but I knew their one son would be since he didn't leave for work until 1 or 1:30. I actually was hoping they had coffee made (they usually make more than they drink, so there's almost always some left) and I was right. I was also hoping I could bum a couple of postage stamps. Then the son asked me if I wanted some scrambled eggs. Heck, yeah! I was hungry and had planned to come home and cook. Now I wouldn't have to! So, I got to have hot coffee, scrambled eggs and a couple pieces of toast before I came home. Really, not a bad gig if you can get it.

Scrapple and Eggs and Whole Grain Toast! Pure Deliciousness!

Whole grain toast, scrambled eggs and pan-fried scrapple
Before I go much further, let me explain scrapple. According to Google, it is a noun. It consists of scraps of pork or other meat stewed with cornmeal and shaped into loaves for slicing and frying. From Dictionary.com we find: cornmeal mush mixed with pork scraps, seasoned with onions, spices, herbs, etc., and shaped into loaves and sliced for frying. But, according to me, it is just plain delicious!!

Basically, scrapple originated with the Pennsylvania Dutch as a way to use up all the meat from a slaughtered hog that wasn't being used some other way. It would all be cooked down with spices (mostly sage, thyme and pepper) and cornmeal into a mush. That would be poured into pans and allowed to cool. Once cooled, it would be cut into blocks which were then sliced and pan fried for breakfast (usually). I grew up on it and I love it.

The eggs are simply eggs. The only way I will eat them is scrambled or some derivative of scrambled (omelets, quiches, etc). I mix mine with milk so that their texture is somewhat custard-y.

The toast is a recent purchase from my first ever visit to a Trader Joe's supermarket. I've heard so much about them, but I am never close to one. So, when my friend decided to stop there to look for a particular item, I went in, too, since I knew I needed bread and milk. I found this wonderful loaf of sliced artisan bread just chock full of whole grains. It has made the most wonderful toast!! I eat it toasted with chunky peanut butter or just buttered as I did with this meal. It is just so good, I want to go back and get more!!

Now, back to scrapple, according to Wikipedia, scrapple bears similarities to white pudding and hog's pudding of England. Now I know I won't eat black pudding (blood pudding) because they do incorporate the blood into it, but if I'm ever in the UK again, I might just try either of those other two just to see how they compare.

Breakfast/Dinner - French Toast/Tomato-Broccoli Impossible Pie

French Toast (wheat) with Pumpkin Pie Spice
As I begin writing here, I haven't started making the tomato-broccoli impossible pie. I was going to wash dishes first, but found that the dish washer isn't draining properly, so I'm working on that to see if I can fix it. I really don't want to have to call the landlord if I can avoid it.

Anyway, I made myself some French Toast this morning and it was wonderful. I probably should keep it in the pan just a little longer so that the toast solidifies a bit more in the middle, but I surely did enjoy it. I sprinkled some Pumpkin Pie spice into the egg-milk mixture and it was a much nicer flavoring than when I try using cinnamon. Not sure why - maybe it just mixes better.

Anyway, the photo isn't the prettiest one, but I love how brown it got (not burned) rather than looking overly "anemic" as I've had in the past. I didn't drown it in syrup, so it wasn't too too sweet, either. It was just the right amount of sweet combined with salty. Neither one dominated.

Now I hope to be able to make the tomato-broccoli pie. I've seen recipes for zucchini-tomato impossible pie and I've seen recipes for broccoli impossible pie, so I think I'll just swap out the zucchini for the broccoli. I know the photos I've seen of the various tomato pies look fantastic, so I am looking forward to trying this recipe out - hopefully tonight. I'll be using instructions for self-rising flour rather than Bisquick because that's what I have on hand. I'll finish this post when everything is done.

Well, tomato-broccoli pie didn't happen. I made the mistake of telling my daughter my plans and she expressed her disgust at the entire concept, so I guess I'm going to have to let the end results speak for themselves. I'll have to get it done while she's working tomorrow. I'll be sure to post whatever it is I do. I shredded the cheese already for it, so you'll hear about it when it happens.

Oh, and I seem to have fixed the dishwasher problem by using a vinegar soak and wash to clean it before I tried anything else. Thanks God!!
