Tuna Fish for Breakfast (and, another giveaway)

While I was in attendance at Irish Night on Saturday, my daughter made one of my favorite meals to make when my kids were younger.....burritos! Deb makes them a bit differently than I did since she avoids high quantities of dairy, but the overall idea is the same. Browned hamburger mixed with refried beans and seasoned with whatever your choice is. I would add salsa and cheese to mine for a creamy mix that could be slapped onto the tortillas before being rolled. Debra didn't add cheese or salsa, but they still tasted wonderful. She also added a can of whole pinto beans to the refrieds, so the pan was FULL of beany goodness! She also dices tomatoes and lettuce to make hers more like quasi-soft tacos. I'll just put salsa and be done with it. Unless I'm eating them enchilada-style, I don't want tomatoes or lettuce on my burrito.


I do love them, so even though I had eaten at Irish Night, I looked forward to grabbing a burrito before bedtime when I got home. I also had one the next morning for breakfast. I had planned to have yet another for breakfast this morning, but learned that Debra had taken ALL the tortillas to work with her filling, tomatoes and lettuce that I had seen her pack. *sigh*


Then I saw the remaining tuna I had made over the weekend still in the fridge, so I opted for a toasted tuna sandwich instead. Not nearly as satisfactory as that burrito would have been, but still pretty good.

  1. Tuna sandwich is good any time of day. Love them toasted with lettuce and mayo ... yum!

  2. I know what you mean. I used to love cold cold tuna on hot buttered toasted English muffins. The contrast in textures and temperatures - wow!! I also like eating tuna with crackers. I just dip them into the tuna and nosh away!
